How Soya Chaap is prepared
It is a kind mock meat prepared from soybean chunks and flour, wrapped around a wooden popsicle to give it an appearance of a leg piece though it is purely a vegetarian item.
Getting readymade Chaaps from the market? You will always find some quantity of maida in it which is used to bind the dough. But if you want to have 100% gluten-free chaap, here is secret behind this:
- As the name reflects “Soya”, you have to take soybean seeds in a bowl and immerse them for about 20-24 hours inside. After which you have to grind it to paste by adding more water to it as per the quantity.
- As Soya Chunks are also used in preparing the Chaaps, you have to soak them too into the water to make them soft so that it too can be easily ground and mixed with the other paste.
- Now as the combined paste is ready, take a bowl of flour or maida as you like and add the paste and salt to it by which you can prepare a dough.
- Roll the dough like a roti & take thin slices out of it which are then wrapped around the popsicles.
- Put the wrapped popsicles into the boiling water and let them get soaked for some time. After this, put them in cold water so that they are cooled down and can be used for making the required variety of Soya Chaap as stated above.
Recipe Notes for Malai Chaap
They say when you are in Punjab, be like a Punjabi. So taking this forward we are also sharing with you the recipe notes of the most lovable and favorite variety of Soya Chaap in Amritsar that is Malai Chaap:
- Take 4-5 Soya Chaaps removed from the sticks and chop them down into pieces.
- Some hung curd mixed with fresh cream and other ingredients like coriander powder, cumin powder, black pepper, salt & chaat masala is the one required to give the Malai Chaap, juicy and scrumptious add on.
- The chopped pieces of Chaaps are now added into it and are blended and let to marinate properly for about half an hour.
- As all this is done, the marinated pieces are then fried and blended with fresh cream and it is ready to be served with green chutney and chopped onions as toppings on it.
